Will these fit a vintage AMF RoadMaster 26X1.75? The older bikes seem to be a bit more complicated these days.
Yes this tire will fit a bike that had ISO 559 26x1.75 tires. If the original tire is labeled with a fraction and not a decimal marking you will want to seek out a different fractional labeled tire and we can guide if needed.

Is this kit Kenda pair of tires set for one price?
It is more than just a pair of tires for one price.
Each quantity for the kit includes:

If you need to replace the rubber on two wheels, you only need one kit.

The size will fit my Aipas C2 Xpress bike, but I'm looking for new rubber as the tires that came with the bike, the rubber is so thin I get a flat just looking at them (2 flats before I've even hit 200 miles on the odometer). What is the thickness of the rubber on these. Pricing kind of has me questioning if they'd be the same as what I have now.
If your Aipas C2 Xpress bike uses ISO 559 26-inch rims and they are less wide than the width of the tire you want to run, these will fit. Are these tires directional?
It is recommended point any chevron shapes to the front. But this is not hyper critical for most applications.

My old tires read 40-559 26x1.50. Will the 26x1.75 or 26x1.95 fit ?
559 is the correct ISO for a 26-inch mountain bike tire. The tire will fit the rim.
40mm is about 1.57-inches wide. 26x1.75 and 26x1.95 are quite wider.
If your frame and fork has the clearance for wider tires, one of the K847 should work.
