Kenda K-shield are puncture resistant. K-shield tires are not impervious to punctures, but the K-shield does a good job to help prevent common punctures from small debris. -

In almost every case, a rim that can accept a 700x42 tire can accept a 700x40 tire. As long as the rim is less than 40mm wide you can run a 700x40 tire.

Are the 700x28 ok for gravel/dirt bike paths?
This is totally fine for dirt and gravel paths! It can be a matter of personal preference as well, but I don't have any issues taking my 700x28 tires on a hard packed gravel road. When riding on gravel or dirt, I would suggest riding at a lower PSI since this will provide more grip. Of course, keep it within the PSI range as indicated on the side of the tire.
